After experimenting with ginger, blackstrap molasses and roasted pineapple peel to achieve a funkier Jamaican style, our team settled on the balance of this spicy version that focuses more on the spirit of sugar cane and the warmth of a summer on the beach provided by cinnamon, allspice and cardamom.
